The Kai Seki Magoroku Kinju 16,5 cm deba knife goes a step further in size and robustness for those who work fish of a certain calibre.

With a 16,5 cm blade and 283 g, it safely cuts heads and bones of fish such as meagre, snapper or salmon, and separates the fillets cleanly. It is also useful for jointing chicken or portioning meat with small bones.

It is handmade in the knife-making tradition of Seki, with single-sided sharpening (single bevel), the classic system of Japanese fish knives. For the Kinju and Hekiju range the manufacturer states a hardness of 56 to 58 HRC (±1) and a handle combining Pakkawood and polypropylene. The handle is 13 cm long.

Designed for cooks who buy large whole fish and prefer to clean it themselves.
