The Kai Shun Classic Gokujo boning knife has a narrow, curved 16,5 cm blade, inspired by traditional Japanese butchery knives.

The curve of the blade follows the contour of the bone and separates the meat with minimal waste. It is very useful for boning chicken thighs, trimming a rack of ribs, removing the membrane from a tenderloin or taking loins off a fish.

It belongs to the Shun Classic series, made in Seki (Japan) from Damascus steel with a VG-MAX steel core. It has a hardness of 61 (±1) HRC, is sharpened on both sides and has a 11,5 cm Pakka wood handle; it weighs 118 g.

A specialist tool for those who buy whole cuts and prefer to prepare them at home.
