The Wüsthof Amici hollow-edge rotoku knife is a Japanese-inspired cook's knife, with a 17 cm blade narrower than that of a traditional santoku. It is designed for fine cuts and almost transparent slices.

It shines when chopping fresh herbs, cutting fish or slicing vegetables. The hollow edge helps stop food sticking to the blade. It is the only Amici with a half bolster: it protects the fingers, but lightens the knife so detailed work is easier.

Forged in Wüsthof steel, it has a Calabrian olive wood handle with its own individual grain, naturally water-resistant and antibacterial. Its organic shape suits hands of any size.

A very complete alternative to the chef's knife for anyone who prefers to cut with precision rather than force.
