Kai Seki Magoroku Hekiju yanagiba knife 21 cm, left-handed
The Kai Seki Magoroku Hekiju 21 cm left-handed yanagiba knife is a sashimi knife with the bevel reversed, designed for those who cut with the left hand.
With a right-handed yanagiba, a left-handed user notices the slice veers off; with this model the cut falls straight and the slice comes out clean. Its 21 cm blade lets you cut salmon, tuna or butterfish in a single stroke.
It is handmade in Seki, with single-sided sharpening. For the Kinju and Hekiju range the manufacturer states a hardness of 56 to 58 HRC (±1) and a handle with Pakkawood and polypropylene. It is very light, 97 g, with a 12,5 cm handle.
The right option for left-handed cooks who prepare sushi and sashimi at home.
