Kai Shun Pro Sho Deba 16,5 cm
The Kai Shun Pro Sho deba , 16,5 cm, is the Japanese knife for working whole fish: a thick, robust blade able to cut through heads and bones without losing its edge.
It is used for scaling, opening and filleting sea bream, sea bass or mackerel, and for separating the head with a sharp blow. At 294 g, its weight does much of the work; afterwards, the fine part of the edge lets you clean the fillets precisely.
Handmade in Seki, Japan, it has a hardness of 60 (±1) HRC and single-sided sharpening, characteristic of traditional Japanese knives. The handle is Pakkawood, 12,5 cm long.
Ideal if you buy whole fish and like to prepare it yourself.
