Kai Seki Magoroku Composite nakiri 16,5 cm
The Kai Seki Magoroku Composite nakiri is the Japanese knife specialised in vegetables, with a 16,5 cm rectangular blade and a completely straight edge.
That straight edge rests along its whole length on the board, so each cut separates the food completely: goodbye to strips of cucumber or leek that stay joined together. It is perfect for julienne, brunoise, slices of cabbage or for chopping herbs in quantity. Its tall shape also makes it easy to transfer what you have cut to the pot.
Handmade and sharpened on both sides, its Composite blade joins two steels of different hardness, 56 and 61 (±1) HRC. The light brown Pakkawood handle is 14 cm long and the whole weighs 185 g, a weight that helps cut hard vegetables with little effort.
