The Kai Seki Magoroku Composite santoku is the Japanese version of the cook's knife. Its name is usually translated as "three virtues", in reference to meat, fish and vegetables.

With a 16,5 cm blade and a straighter profile than the Western chef's knife, it works with forward and downward cuts, perfect for thin slices of courgette, julienned carrot or cubes of salmon. The broad blade protects the knuckles and helps scoop up the ingredients.

The Composite series combines two steels of different hardness in the blade (56 and 61 ± 1 HRC), joining a long-lasting edge with strength. Handmade, with a double-sided edge and a 14 cm light brown Pakkawood handle, it weighs 166 g.

Recommended for anyone who prefers knives that are slightly shorter and lighter than the classic chef's knife.
