The Kai Shun Nagare Black santoku is the Japanese version of the all-purpose kitchen knife: a broad 18 cm blade, rounded tip and a straighter profile than the Western chef's knife.

Its name alludes to its "three virtues": meat, fish and vegetables. The broad blade lets you scoop up what you have chopped and take it straight to the pan, and its straight edge favours top-to-bottom cutting, ideal for slicing garlic, cutting julienne or preparing brunoise.

Handmade in Seki, Japan, with a damascus steel blade and a hardness of 61 (±1) HRC. It weighs 218 g, is sharpened on both sides and has a 14 cm Pakkawood handle, moisture-resistant and very pleasant to the touch.

An excellent option for anyone who cooks a lot of vegetables or prefers the vertical cut to rocking.
